The wines are made with great care from extremely high quality hand-picked grapes grown on these low yielding (20-30HL per hectare) rocky schist vineyards.

The red wines are blended from Grenache, Syrah, Mourvedre, Cinsault and old vine Carignan. All the Grenache undergoes a cold maceration for 10-14 days prior to fermentation to leave a very fruity wine with body and complexity but without any unwanted extraction.

Following a natural approach to wine making, temperature is strictly controlled during all phases to eradicate unnecessary use of additives, but ensuring clean wines exhibiting pure fruit characteristics

For the red wines the “cuvaison” (skin contact) is typically longer than normal for the area thanks to the cold maceration and gentle extraction techniques.

Fermentation temperatures are 14/15 degrees for the whites and rose and 18-26 for the reds.

All these factors together lend themselves to fresh, spicy yet fruity wines drinkable quite young but with the potential of sufficient structure and tannins to age for 10 years or more if desired.
